Collagen Fruit Jellies (Printable Version)

Chewy fruit jellies boosted with collagen for a wholesome, protein-rich homemade snack.

# What You Need:

→ Fruit Base

01 - 1 cup 100% fruit juice (orange, mixed berries, or apple)
02 - 2 to 3 tablespoons honey or maple syrup, optional, to taste

→ Collagen & Gelling

03 - 2 tablespoons (about 20 g) grass-fed collagen peptides
04 - 3 tablespoons (about 30 g) unflavored gelatin powder

# Directions:

01 - Pour the fruit juice into a small saucepan. Sprinkle the gelatin evenly over the surface and let it sit for 2 to 3 minutes to bloom.
02 - Set the saucepan over low heat and stir constantly until the gelatin dissolves completely. Do not allow the mixture to boil.
03 - Remove from heat. Stir in the collagen peptides and sweetener if using, mixing thoroughly until fully combined.
04 - Pour the mixture into silicone molds or a small baking dish lined with parchment paper.
05 - Refrigerate for at least 2 hours or until the jellies are completely set.
06 - Once set, remove the jellies from the molds. If using a baking dish, cut into bite-sized pieces with a paring knife.
07 - Transfer to an airtight container and store in the refrigerator for up to 1 week.

# Expert Tips:

01 -
  • These come together with five ingredients and zero baking, which means you get all the fun of candy making without the stress.
  • Collagen sneaks in a protein boost that actually makes these a snack you can feel good about eating at any hour.
  • Kids think they are getting a treat and you know they are getting something nourishing, which is basically a parenting win.
02 -
  • If the gelatin does not bloom properly your jellies will be soft and sad, so always sprinkle it evenly and give it the full time to absorb before applying heat.
  • Using juice with added sugar or artificial flavors will throw off both the taste and the set, so reach for 100% juice with nothing extra on the label.
  • These need to stay refrigerated and will soften quickly at room temperature, so plan accordingly for parties or lunchboxes.
03 -
  • Let the mixture cool for just a minute before pouring into molds so the heat does not warp them, but do not wait too long or it starts to set in the pan.
  • For a vegan version swap the gelatin for agar agar powder, though the texture will be slightly firmer and less chewy.
